Cooking is a beautiful activity that connects the present and the past together. We may feel the warmth of the sun and the chill of the wind, taste the richness of life itself, and establish a connection with the planet and the seasons. Cooking serves as a reminder of our interconnectedness with nature and of how we can transmit our ideas, emotions, and values through the land. In a nutshell, cooking is a celebration of life and the human spirit via its art and enchantment.
As a cook, I have always found that the five senses play a crucial role in the culinary arts. From the sight of a beautifully plated dish, to the aroma of a freshly cooked fish, to the sound of a sizzling pan and the touch of a perfectly cooked steak, the senses converge to create a truly amazing dining experience. I believe that food brings people together, and that a great meal can create lifelong memories.
I believe that it is important to respect the original dish. When I am cooking a traditional recipe, I try to stay true to the original ingredients and cooking method, while adding my own personal touch to make it my own. If I can improve upon the recipe, then I will, but if not, I am happy to enjoy the authentic flavours that the dish has to offer “Fusion not confusion”.
Perhaps most importantly, I believe in fusion but not confusion. I love to combine ingredients and flavours from different cuisines and cultures, but I do so in a way that is respectful and tasteful. For me, fusion is not about randomly throwing together disparate ingredients and hoping for the best - it is about carefully considering each element and finding ways to complement and enhance one another with a respect to the original dish.
